ROASTED BEET SALAD

INGREDIENTS

1 pound of beets, washed, trimmed and peeled

2 tablespoons of kosher salt

½ cup of olive oil

½ cup of shallots, minced

¼ cup of aged balsamic vinegar and an additional tablespoon for drizzling

¼ cup of extra-virgin olive oil and an additional tablespoon for drizzling

½ cup of chives, sliced thin

4 cups of Red Bibb lettuce, chopped into 2-inch squares

1 cup of microgreens

1 cup of pistachios, roasted and chopped

Salt and pepper to taste

1 pound of beets, washed, trimmed and peeled

¼ cup of extra-virgin olive oil and an additional tablespoon for drizzling

½ cup of chives, sliced thin

4 cups of Red Bibb lettuce, chopped into 2-inch squares

1 cup of microgreens

1 cup of pistachios, roasted and chopped

Salt and pepper to taste

  DIRECTIONS

  1. Preheat oven to 350°F.
  2. Place beets on the aluminum foil or parchment paper. Drizzle with olive oil. Season with kosher salt and fold the foil to form a pouch around the beets.
  3. Place the pouch in a baking dish with the folded side up. Bake for about 45 minutes. Test for doneness by using a paring knife, looking for no resistance. Peel beets while still warm under running water. To peel the beets, take both of your thumbs and push forward. They should be easy to rub off. If not, then they need more time in the oven.
  4. Cut beets into wedges then add beets into a large mixing bowl.
  5. Add the minced shallot to the beets, followed by salt, pepper, balsamic vinegar, extra-virgin olive oil, and chives. Reserve a sprinkle of chives for finishing.
  6. To serve, place the Bibb lettuce on a plate, then spoon a generous portion of the beet mixture on top of the lettuce.
  7. Sprinkle with microgreens, chives, and pistachios.
  8. Drizzle with olive oil and balsamic vinegar to finish.
