Chimichurri is an uncooked sauce that is typically used as a table condiment for anything grilled. It originates from Argentina as a staple in their cuisine, often being referred to as “Argentina’s BBQ sauce”. Typically, it's made with fresh parsley leaves, however this is a great way to use up those fragrant and delicious carrot tops! Not only are carrot tops delicious, they are also packed with nutrients so enjoy generous amounts on sliced raw vegetables, grilled meats and fish, or even grilled carrots!

INGREDIENTS
1 cup carrot greens, washed and finely chopped
¼ cup fresh oregano finely chopped
¼ teaspoon cumin
1 teaspoon sweet paprika
1 teaspoon crushed red pepper flakes
1 teaspoon garlic, minced
1 teaspoon salt
½ teaspoon black pepper freshly ground
¼ cup white wine vinegar
¼ cup olive oil (a good fruity one, like Arbequina)
INGREDIENTS
1 cup carrot greens, washed and finely chopped
¼ cup fresh oregano finely chopped
¼ teaspoon cumin
1 teaspoon sweet paprika
1 teaspoon crushed red pepper flakes
1 teaspoon garlic, minced
1 teaspoon salt
½ teaspoon black pepper freshly ground
¼ cup white wine vinegar
¼ cup olive oil (a good fruity one, like Arbequina)
DIRECTIONS
- Mix carrot greens with all spices, herbs and minced garlic.
- Stir in the vinegar and olive oil.
- Allow to rest at room temperature for 15 minutes.
- Taste and adjust seasonings. (tip: taste it with a carrot or a piece of bread rather than by the spoonful)
