INGREDIENTS
1 pound carrots, peel and cut in half
2 tablespoons brown sugar
1 tablespoon smoked paprika
2 teaspoons chile powder
2 teaspoons kosher salt
1 teaspoon black pepper
1/2 cup olive oil
¼ cup chives, parsley, tarragon finely chopped (optional)
Squeeze of lemon juice
INGREDIENTS

DIRECTIONS
- Preheat to 450 degrees.
- Mix all dry ingredients together in a bowl.
- In a large bowl, toss your carrots and oil together. Make sure the carrots are covered with oil.
- Season the carrots, you can be as generous as you like with your BBQ seasoning. If you have any leftover store in a container and keep dry for future use.
- Place the carrots on a parchment lined sheet tray.
- Roast for 20 minutes or until slightly caramelized.
- Top with fresh herb and lemon juice before serving.
