Tomato Consomme

 This is a very simple recipe that packs a refreshing punch of flavor. We love making this at the end of the season and freezing some for the winter to remind us of warmer times. This tomato water also works as a cocktail base for a Bloody Mary Martini.

EQUIPMENT

Blender

Cheese Cloth (3 feet)

Paring knife

Rubber bands or butchers’ twine

Colander and a bowl that fits the colander inside

 

INGREDIENTS - CHILLED GAZPACHO CONSOMME

5 lbs of ripe tomatoes (bruised or not so perfect tomatoes are okay)

2 lbs of cucumbers, peeled and diced

2 jalapeños, split and seeded (leave the seeds if you like it spicy)

2 limes, zest and juice

2 tbsps of sea salt

 

FOR THE GARNISH

1 cucumber, melon balled

1 tomato, nicely diced

1 jalapeño, cut into thin rings and soaked in ice water

Possibilities: Feta dice, whipped ricotta, thinly shaved country ham or raw tuna, or literally any vegetable in the garden.

DIRECTIONS

  1. Clean all the vegetables under warm running water. Remove any stems or blemishes with a paring knife.
  2. Working in batches, place the ingredients for the tomato water in a blender and puree until smooth, about 1 minute. Pour into a large pitcher or bowl. Continue until all ingredients are pureed. Taste the puree for seasoning and spice.
  3. Place cheese cloth in the colander in a crisscross pattern until all the surface is covered. Tie the string or rubber band around to keep cheese cloth in place. Place colander in the bowl.
  4. Very gently using a ladle or cup measurer, lay the puree in (pretend you have egg yolks in the cup and do not want to break them). Continue laying the puree in the same area until complete.
  5. Cover and store in the fridge overnight. Remove colander from bowl to reveal your clear tomato water. (hint: use the leftover pulp in a tomato sauce recipe)
  6. To serve, place your garnish in a bowl and pour your tomato water out of a pitcher around the table.
