This savory scone can be served any time of day. Great for brunch or that pre dinner snack. These scones also store well in the freezer to use as a last-minute addition to a soup or stew.
INGREDIENTS
- 2 ½ cups All Purpose Flour
- 2 Tbsp. Granulated Sugar
- 1 Tbsp Baking Powder
- 1 tsp Salt
- ½ Cup Unsalted Butter, cold
- 2/3 Cup Buttermilk
- 2 each Whole Egg
- 2/3 Cup Shredded Gruyere
- ¼ Cup Grated Parmesan
- ¼ Cup Chopped Green Onion
- 2 Tbsp. Milk
DIRECTIONS
- Preheat oven to 400°F.
- Combine flour, sugar, baking powder and salt. Cut in the butter with a pastry blender, fork or two knives, until the butter bits are pea sized.
- Lightly whisk eggs and buttermilk. Add to the flour-butter mixture. Using a wooden spoon, fold mixture until it begins to come together. Add the cheeses and onion to the dough and mix until everything is incorporated.
- Turn out the dough onto a well-floured surface and knead gently for less than one minute. Pat dough out to a 3/4- to 1-inch thickness. Cut into 10 triangles or the shape of your choice with a biscuit cutter.
- Brush the scones with milk and place on a parchment-lined baking sheet. Bake for 25 minutes or until golden brown.
