MESCLUN SALAD

In our household we eat a salad with most meals. This one is simple and easy to throw together! Ashbourne Farms Mesclun mix provides just the right balance to this salad.

INGREDIENTS

  • 4 handfuls Mesclun mix
  • 1 Tbsp. Minced shallots
  • 3 Tbsp. Buttermilk (best quality you can find)
  • 1 Tbsp. Lemon Juice
  • 1 Tbsp. Extra Virgin Olive Oil
  • 1/2 Tsp. Kosher salt and black pepper
  • 2 oz. Pecorino Toscano cheese
  • 1 Tbsp Fresh Dill

  DIRECTIONS

  1. To mince shallot, peel then start to chop finely. Don’t worry if it’s not pretty.
  2. Pick fresh dill. Just pluck the fronds. If you get some stems don’t worry it still tastes good.
  3. To make dressing: mix lemon juice, olive oil, salt, pepper, in a small bowl then whisk together. While whisking slowly add buttermilk until all in.
  4. Grab a small plate and use vegetable peeler to get thin ribbons of Pecorino Toscano cheese.
  5. Place mesclun mix, minced shallots, and dill in large bowl. Pull to the sides making a hole for the dressing. Add dressing and mix. Add salt if needed.
  6. Plate individually or family style. Top with Pecorino Toscano cheese.


Tips: Add different herbs or other veggies. You can even add something crunchy like nuts or breadcrumbs.
