Kohlrabi is one of those winter veggies best eaten raw! It has a crunchy texture, slightly funky flavor that we just can’t get enough of.
INGREDIENTS
- 1 ea. Large kohlrabi or 2 small – straight from the fridge
- 1/4 Cup Walnuts
- 3 Tbsp. Buttermilk (best quality you can find)
- 1 Tbsp. Lemon Juice
- 1 Tbsp. plus 1 tsp Extra Virgin Olive Oil
- 1/2 tsp. Kosher salt and black pepper
- 1 small handful Arugula
- 1 tsp. Chives
DIRECTIONS
- Preheat oven to 350F. Place walnuts on sheet tray. Add about 1 tsp of olive oil and a small pinch of salt. Toss together and place in oven for 8 minutes or until golden and fragrant.
- To make dressing: mix lemon juice, olive oil, salt, pepper, in a small bowl and whisk together. While whisking slowly add buttermilk until all in.
- Peel the outside of the Kohlrabi, square off one side with a knife to give yourself a stable working surface. Then cut kohlrabi into ½” cubes.
- Once all the kohlrabi is cubed, add to the large bowl along with buttermilk dressing and chives. Let sit for about 10 minutes or so.
- To plate place in a bowl in a tight mound, top with walnuts. Add some arugula on top (not much just an accent or a lot if you’re into it!)
Tips: The best tip to any cooking is do what you like. If you want to change the salt amount, do it. If you don’t like walnuts, try hazelnuts.
If you’re allergic to nuts, try pepitas. If you want to add a spice on top try sumac, carraway, chili flake or fennel.
