This toast is simple but satisfying! Ashbourne Farms radishes are key to making this good. Quality is key when simplicity is the goal.
INGREDIENTS
- ¼ cup Ricotta - I like Murrays which can be found at Kroger
- 1 Loaf Artisan Sourdough Bread, sliced
- 4 each Ashbourne Farms Easter egg radish
- 1 bunch of Italian Parsley aka Flat Parsley
- 1 each Lemon, cut in half
- 2 tbsp. Extra Virgin Olive Oil

1 tsp Kosher Salt
DIRECTIONS
- Preheat the skillet on medium high heat. Pull the ricotta out to sit on the counter while you cut your radishes.
- Shave Radishes. I would use a mandolin but if you do not have one use a knife and cut them as thin as you can. We are looking for them to be slightly see through.
- Pick parsley leaves off of stems.
- Get your bread ready for the pan.
- Put about 1 tsp of Olive Oil into preheated pan. Place a piece of bread in the oil and spin to coat. Continue to toast until it reaches your desired level of darkness. Repeat on the other side.
- Once bread is toasted, smear ricotta edge to edge making a thick layer. Shingle radishes on top of the ricotta until fully covered.
- Place on plate and drizzle with olive oil and fresh lemon juice to taste.
- Place parsley on top. Finish with salt
Tip: Always hold a lemon that you are juicing by hand with the seeds facing your palm. Squeeze with your palm facing up allowing the juice to go through your fingers. Try this recipe with different vegetables, cheeses, or herbs.
