This grilled broccoli recipe can be served as an appetizer, side or main dish. Grilling broccoli gives it more depth and adds a smoky grill flavor.
INGREDIENTS
2 lbs. Broccoli, medium stalk
¼ Cup Olive Oil
1 Tbsp Black Pepper
1 Tbsp Salt
½ Tbsp Garlic salt
½ Tbsp Onion salt
INGREDIENTS FOR ANCHOVY OILTabbouleh
2 each anchovy Fillets (optinoal) Tip: White anchovies are sweeter, not as salty but more $$
1 Cup Olive Oil
½ oz Raw shallot
1 tsp Salt
1 each Lemon, zested and juiced
1 Cup Parsley
¼ Cup Green onion, rough chopped
1 Tbsp Minced garlic
DIRECTIONS FOR ANCHOVY OIL
- In blender add olive oil, anchovy, lemon zest & juice, parsley, green onion, garlic, and shallot.
- Blend until smooth. Set aside.
DIRECTIONS
- Preheat grill to Hot
- Heat a large sauce pot with water and bring to a boil
- Gather an ice bath to shock (stop cooking) broccoli once it comes out
- Add Broccoli to boiling water, stems first for 30 seconds then submerge for approx. 2 minutes
- Place cooked Broccoli into ice water bath and cool completely
- Remove cooled broccoli and place into strainer to drip off excess water so oil will stick
- Mix oil, salt, black pepper, garlic salt and onion salt. Coat broccoli evenly with mixture.
- Start with broccoli stalk on hot spot to protect the florets and balance the cooking time. Grill until stalk is tender, approx. 6 minutes.
- Place grilled broccoli in a large bowl Generously toss with anchovy oil mixture.
