Cinnamon Swirl Bread

There is nothing better than the smell of fresh baked cinnamon swirl bread on a crisp fall day. This recipe is super easy, and it yields two loaves. Use the second loaf to make French Toast! Feel free to add raisins or nuts to the swirl for added textures.

INGREDIENTS

Dough:

4 ¾ cups of bread flour

1 ¼ tsp of salt

1 ¾ tsp of granulated sugar

2 tsp of instant yeast

1 ¾ cups of whole milk (room temp.)

11 tbsps unsalted butter, softened

Cinnamon swirl:

½ cup of granulated sugar

2 ¼ tsps of ground cinnamon

¼ tsp of ground Allspice (optional)

¼ tsp of ground Cardamom (optional)

Egg Wash:

1 large whole egg

2 oz of water

INGREDIENTS

Dough:

4 ¾ cups of bread flour

1 ¼ tsp of salt

1 ¾ tsp of granulated sugar

2 tsp of instant yeast

1 ¾ cups of whole milk (room temp.)

11 tbsps unsalted butter, softened

Cinnamon swirl:

½ cup of granulated sugar

2 ¼ tsps of ground cinnamon

¼ tsp of ground Allspice (optional)

¼ tsp of ground Cardamom (optional)

Egg Wash:

1 large whole egg

2 oz of water

DIRECTIONS

  1. In the bowl of a stand mixer with the dough hook attachment, combine the bread flour, salt, sugar, instant yeast, and whole milk and mix on low speed for about 4 minutes.
  2. After all ingredients are incorporated, increase the speed to medium and add half the butter. Mix for 1 minute.
  3. Add remaining butter and mix for an additional 5 minutes. Butter should be completely incorporated into the dough.
  4. Place dough in an oiled bowl and can hold twice its size. Cover with plastic wrap and let rest 45 minutes. After 45 minutes, pull and stretch the dough from the sides and fold in. Cover and let rest another 45 minutes.
  5. After second rest, turn dough out onto a floured surface and divide in half.
  6. Preheat oven to 375 degrees. In a small bowl, whisk together the cinnamon swirl ingredients.
  7. Roll out each piece of dough into an 12x8 inch rectangle.
  8. Brush with egg wash (equal parts egg and water combined) and sprinkle with swirl mixture. Be liberal.
  9. Take the short end of the dough and roll up tightly, sealing the seam at the end.
  10. Place rolls into sprayed loaf pans and lightly cover with plastic.
  11. Allow to rest and proof for approximately 1 hour.
  12. Brush top with more egg wash and sprinkle with more swirl mixture.
  13. Bake for 30 minutes then reduce temperature to 350 F. Bake an additional 15 minutes.
  14. Remove from oven and let rest 5 to 10 minutes. Remove from pan and cool on a wire rack.
