Charred Okra and Tomato

Cooked hot and fast, this dish is a fun way to use okra. It pairs great served with grilled sourdough and a big steak.

INGREDIENTS

½ lb. Okra Washed and Air Dried

½ Pint Cherry Tomatoes

½ Tsp Coriander

½ Tsp Cumin

¼ Cup Marcona Almonds

2 Tbsp Extra Virgin Olive Oil (Divided)

1 Tbsp Sherry Vinegar (Divided)

1 Tsp Kosher salt (Add More or Less to Taste)

1 Tsp Maldon Sea Salt

½ Cup Basil — Hand Torn

DIRECTIONS

  1. Preheat grill as hot as it will get. 600 degrees or hotter if possible. Place grill basket in grill to preheat.
  2. Place Marcona almonds in zip lock bag and smash with a rolling pin or skillet. Crush to get assorted sizes and textures
  3. Once grill has reached high heat, place okra in grill nasket in a flat, single layer. Do not stack okra on top of each other. Cook until lightly blackened on one side.
  4. Using tongs, grab grill basket and dimp cooked okra into large bowl. Place empty basket back on grill and close lie lid to conserve the eat if cooking more.
  5. Add coriander, cumin, 1 Tbsp EVOO, ½ Tbsp sherry vinegar, 1 tsp or so salt, and toss. Add more salt to taste if needed. Dump onto serving plate.
  6. Char cherry tomatoes on grill just as you did the okra.
  7. Once tomatoes are blackened on one side, toss into same bowl used for okra. Add remaining 1 Tbsp EVOO, ½ Tbsp sherry vinegar and salt to taste. Dump tomatoes and juices onto serving plate with okra.
  8. To finish, tear basil by hand over the plate. Add crushed Marcona almonds. Drizzle remaining EVOO over top and sprinkle with Maldon sea salt.
