CELERY AND ZA'ATAR TABBOULEH

INGREDIENTS

(If you unable to find Za’atar, mix the following dry spices together)

3 tablespoons dried thyme

3 tablespoons toasted sesame seeds

2 tablespoons sumac

½ teaspoon kosher salt

¼ Cup EVOO


Tabbouleh

1 cup bulgur wheat

2 tablespoons of Za'atar seasoning

1¾ cups water

¼ cup lemon juice, reserve half

¼ cup good quality, olive oil

½ cup fresh parsley, finely chopped

1½ cups celery stalk and inner leaves, finely chopped

¼ cup green onion, thinly sliced

½ cup plain Greek yogurt mixed with 2 teaspoons of Za’atar

¼ cup roasted walnuts, rough chopped

½ cup crumbled feta cheese

Salt and pepper (to taste)

1 cup bulgur wheat

2 tablespoons of Za'atar seasoning

1¾ cups water

¼ cup lemon juice, reserve half

¼ cup good quality, olive oil

½ cup fresh parsley, finely chopped

1½ cups celery stalk and inner leaves, finely chopped

¼ cup green onion, thinly sliced

½ cup plain Greek yogurt mixed with 2 teaspoons of Za’atar

¼ cup roasted walnuts, rough chopped

½ cup crumbled feta cheese

Salt and pepper (to taste)

  DIRECTIONS

  1. Bring water to a boil in a saucepan.
  2. In a large saucepan mix Za’atar and bulgur wheat, set aside.
  3. Carefully pour boiling water over bulgur mixture.
  4. Let the bulgur mixture completely absorb the water. This will take about 45 minutes. Fluff with a fork, cover and set aside on counter to cool.
  5. Season with salt and black pepper.
  6. Once cooled, transfer into a large bowl and fluff again with your fork.
  7. Stir in half of the lemon juice, olive oil, green onion, and celery into bulgur mixture.
  8. In a separate bowl, mix the yogurt with the remaining lemon juice.

To serve, place ½ cup of tabbouleh on plate and top with a tablespoon of the yogurt mixture,
walnuts and crumbled feta to finish.
