INGREDIENTS
(If you unable to find Za’atar, mix the following dry spices together)
3 tablespoons dried thyme
3 tablespoons toasted sesame seeds
2 tablespoons sumac
½ teaspoon kosher salt
¼ Cup EVOO
Tabbouleh
1 cup bulgur wheat
2 tablespoons of Za'atar seasoning
1¾ cups water
¼ cup lemon juice, reserve half
¼ cup good quality, olive oil
½ cup fresh parsley, finely chopped
1½ cups celery stalk and inner leaves, finely chopped
¼ cup green onion, thinly sliced
½ cup plain Greek yogurt mixed with 2 teaspoons of Za’atar
¼ cup roasted walnuts, rough chopped
½ cup crumbled feta cheese
Salt and pepper (to taste)

1¾ cups water
¼ cup lemon juice, reserve half
¼ cup good quality, olive oil

1½ cups celery stalk and inner leaves, finely chopped
¼ cup green onion, thinly sliced
½ cup plain Greek yogurt mixed with 2 teaspoons of Za’atar
¼ cup roasted walnuts, rough chopped
½ cup crumbled feta cheese
Salt and pepper (to taste)
DIRECTIONS
- Bring water to a boil in a saucepan.
- In a large saucepan mix Za’atar and bulgur wheat, set aside.
- Carefully pour boiling water over bulgur mixture.
- Let the bulgur mixture completely absorb the water. This will take about 45 minutes. Fluff with a fork, cover and set aside on counter to cool.
- Season with salt and black pepper.
- Once cooled, transfer into a large bowl and fluff again with your fork.
- Stir in half of the lemon juice, olive oil, green onion, and celery into bulgur mixture.
- In a separate bowl, mix the yogurt with the remaining lemon juice.
To serve, place ½ cup of tabbouleh on plate and top with a tablespoon of the yogurt mixture,
walnuts and crumbled feta to finish.
