A great alternative to meat jerky! This vegan jerky is a great snack on the go or as an addition to salads or sandwiches. It will add that umami flavor to any dish.

INGREDIENTS

3 tablespoons low-sodium Tamari (more to taste)

3 tablespoons apple cider vinegar

2 tablespoons maple syrup

1 teaspoon extra-virgin olive oil

½ teaspoon smoked paprika

¼ teaspoon ground chili powder

1 pound mushrooms, cut in half

INGREDIENTS

3 tablespoons low-sodium Tamari (more to taste)

3 tablespoons apple cider vinegar

2 tablespoons maple syrup

1 teaspoon extra-virgin olive oil

½ teaspoon smoked paprika

¼ teaspoon ground chili powder

1 pound mushrooms, cut in half

DIRECTIONS

  1. Whisk together the tamari, vinegar, syrup, olive oil, paprika, and chili.
  2. Transfer to an airtight container and add the mushroom slices. Marinate overnight or a minimum of 8 hours.
  3. Preheat oven to 250°F and line two baking sheets with parchment paper. Arrange the mushroom slices on the sheets with space between each piece.
  4. Bake for 1 hour. Turn each piece and bake for another hour or until they have lost 70% of the original size and browned slightly. They should have a chewy texture.
  5. Remove from the sheet trays and place on a cooling rack and allow to cool completely before transferring them to an airtight container.
  6. Stored in the fridge. The jerky will keep for up to 1 week.
