Corn pudding is something that takes me back to holiday times with my family when we would sit and visit around the table sharing stories and wonderful food. It is a great way to use up all that corn that comes in hard late summer and early fall. This dish is sweet and luscious while upholding the integrity of that wonderful corn and keeping it the star that it deserves to be.
EQUIPMENT

- Chef’s Knife
- Mixing Bowl
- Rubber Spatula
- Whisk
- 9x13 Baking Dish
INGREDIENTS
- 2 Cups Ashbourne Farms Corn, Shucked, Cut off the Cob
- 2 ea. Eggs, Beaten Lightly
- 2 tsp. Kosher Salt
- 2 Tbsp. Local Honey
- 2 Cups Whole Milk
- ¾ Cup Unbleached AP Flour
- 4 Tbsp. Unsalted Butter
- 1 ea. Ashbourne Farms Jalapeno, Seeded, and Diced Fine
- Fresh Cracked Black Pepper to taste
DIRECTIONS
- Preheat oven to 350 degrees. Place butter in baking dish in the oven until hot and melted.
- While butter is melting shuck and strip all corn off the cob removing as much of the silks as possible and set aside.
- Split jalapeno, seed, and dice fine, set aside.
- In bowl, whisk the eggs, adding salt, pepper, honey, flour, and milk until combined and smooth consistency.
- Add corn and jalapenos to the mix incorporating well.
- Pull baking dish out of oven and swirl butter around and pour butter while whisking into corn mix whisking until butter is combined.
- Pour corn pudding mix into hot baking dish and bake for 1 hour on 350 degrees or until center is set and top golden brown. You can test center the same way as a cake, using a toothpick or a cake tester to see if it comes out smooth. If needed, cook another 10 minutes or until set. Remove, let cool slightly, serve when ready.
