Spiced Pumpkin Bread

This is a two-part recipe. Part one instructions are for the pumpkin puree. Part two instructions are for the spiced pumpkin bread.

 

PUMPKIN PUREE INGREDIENTS

  • Pie or Baking Pumpkins
  • Kosher Salt

 

DIRECTIONS

  1. Preheat oven to 400 degrees
  2. Slice a small piece of skin off one side of the pumpkin so when laid on its side, the pumpkin will lay flat without rolling. Remove the stem and split the pumpkin in half from top to bottom, using a large knife. Scoop out seeds and fiber with a large metal spoon or ice cream scoop. Reserve seeds for another use.
  3. Sprinkle the flesh with kosher salt. Lay the halves, flesh side down, on a parchment paper-lined half sheet pan. Roast until a paring knife can be easily inserted and removed from the pumpkin, 30 to 45 minutes. Test in several places to ensure doneness.
  4. Place sheet pan on cooling rack and cool pumpkin for 1 hour.
  5. Using a large spoon, remove the roasted flesh of the pumpkin and place in bowl of a food processor. Process until smooth, 3 to 4 minutes. Store in the refrigerator for up to 1 week or freeze for up to 3 months.

  • Cook Time: 50 Minutes
  • Makes: Two 8"x4" Loaves

 

PUMPKIN BREAD INGREDIENTS

  • 3 Cups All Purpose Flour
  • 1 tsp. Baking Soda
  • ½ tsp. Baking Powder
  • 1 ½ tsp. Cinnamon
  • 1 tsp. Ground Nutmeg
  • ½ tsp. Ground Cloves
  • ½ tsp. Salt
  • 3 Cup Granulated Sugar + 3Tbsp for coating pans
  • 3 ea. Whole Eggs
  • 1 Cup Vegetable Oil
  • 16 oz. AF Pumpkin Puree
  • 1 Cup Raisins (Optional)
  • 1 Cup Chopped Nuts (Optional)

 

DIRECTIONS

  1. Preheat oven to 325
  2. Prepare two 8” x 4” loaf pans with pan spray or butter and a coat of granulated sugar.
  3. In a medium bowl, sift together flour, baking soda, baking powder, spices, and salt
  4. In a separate bowl, stir sugar, eggs, and flour mixture until combined. Beat in oil until fully incorporated.
  5. Fold in pumpkin puree, raisins, and nuts, and divide among the prepared pans.
  6. Bake at 325 for 40 to 50 minutes. Cool for 10 minutes and remove from pans.
  7. Continue to cool to room temperature on a cooling rack.
