Spaghetti Squash Fra Diavalo with Pecorino and Chili Oil

This recipe is a tasty optino for the hard to please vegetarian in your house. Once you bake spaghetti squash, the flesh is almost identical to its namesake. By using the shell of the squash as a serving vessel, mess is minimal and restaurant-like presentation is easy.

 

INGREDIENTS

2 Small Spaghetti Squash, Split in Half Lengthwise, Seeds Removed with Ice Cream Scoop

¼ Cup Extra VIrgin Olive Oil

Kosher Salt, to Taste

2 Tbsp Extra Virgin Olive Oil

½ Small Yellow Onion, Medium Dice

½ Small Carrot, Peeled, Smaller Dice

3 Cloves Garlic, Thinly Sliced

½ Tsp Red Chili Flakes

1 Tsp Dried Oregano

2 Tbsp Tomato Paste

28 Ounce Can of San Marzano Tomatoes

Ground Black Pepper, to Taste

6 Ounces Grated Pecorino Romano Cheese, Divided

1 Tbsp Asian Chili Oil, Divided

DIRECTIONS For SQUASH

  1. Brush flesh side of each squash with loive oil. Season with salt and pepper to taste.
  2. Place squash flesh-side down on cookie sheet and bake at 350 F for 25–35 minutes.
  3. Remove squash from oven once it yields to pressure and seems soft.
  4. Get a sauté pan hot, add the baked spaghetti squash, and toss until it starts to brown. Season with salt and pepper.

DIRECTIONS For Fra DIAVOLO SAUCE:

  1. Heat 2 Tbsp olive oil. Add Onion, Carrot, and Garlic.
  2. After a few seconds, add chili flakes, thyme, and oregano.
  3. Brown vegetables slightly, then add the tomato paste and canned tomatoes.
  4. Simmer for 20–30 minutes.
  5. Season with salt and pepper, to taste.

To Serve:

  1. Divide roasted and seasoned squash flesh between the four squash shells.
  2. Top each with ¾ Cup fra diavolo sauce and pecorino cheese.
  3. Bake at 350 F for 15 minutes.
  4. Serve with a few drops of the Asian chili oil.
