INGREDIENTS
- 1 Lb. Ashbourne Farms Zucchini
- 1 Each Small Crème Fraiche, Vermont Creamery, Available at Kroger
- 2 oz. Walnuts, Toasted and Salted
- 1 Small Clamshell Basil
- 1 Each Lemon
- 2 TBSP Olive Oil
- 1 tsp Salt
- 1 Pinch Maldon Salt
DIRECTIONS
- Cut zucchini into 1”x 3” sticks or fries. Set aside.
- Place walnuts in bag and crush into big and small pieces.
- Cut lemon in half. Set aside.
- Heat grill as hot as possible, about 600 degrees. If using a grill basket, place on grill to preheat.
- Grab a bowl, tongs, and towel for grilling station.
- Place zucchini in basket or parallel to grate, in a single layer on grill.
- Grill for about 2 minutes, until exterior is charred and translucent halfway through. Remove and pull zucchini into bowl.
- While zucchini is fresh off the grill, toss with ½ lemon juiced (be sure not to get seeds), 1 TBSP olive oil, 1 tsp salt. Let sit in bowl for 2 to 3 minutes to cool and absorb dressing.
- While zucchini is cooling, Place about ¼ cup crème fraiche on serving plate, and push out to make a 6” cirlce. Use tongs to place zucchini in the center.
- Finish with crushed walnuts, torn basil, maldon salt, 1 TSBP olive oil.
