INGREDIENTS
- 2 Bunches Ashbourne Farms Kale, rib removed and cut into thin strips
- 1 ea. Ashbourne Farms Onion, finely diced
- 1 Clove Garlic, peeled and minced
- 1 Cup Heavy Cream
- 1 Cup Whole Milk
- 4 oz. Smoked Gouda Cheese, grated
- 2 Tbsp. Unsalted Butter
- 2 Tbsp. All Purpose Flour
- 1 tsp. Kosher Salt
- ½ tsp. Fresh Cracked Pepper
- 1 ea. Lemon, Zested and Juiced
DIRECTIONS
- Fill a 4-quart saucepot with water and bring to a boil
- Add strips of kale for 60 seconds
- Remove kale with tongs and allow to dry on a clean kitchen towel
- Discard blanch water and use same pot
- Turn on medium-high heat and add butter. Once melted, add onions and garlic, cook for 5 minutes
- Add flour, whisking constantly so flour and butter don’t burn. Lower heat to medium and stir constantly for about 5 minutes
- Slowly add cream and milk whisking constantly so nothing sticks to the pan. Continue to cook and stir until thickened and coats the back of a spoon, about 5 minutes
- Add salt, pepper and freshly grated gouda, stirring constantly until smooth
- Combine blanched kale into the cheese sauce, reduce heat to low and cook, stirring occasionally for another 5 minutes
- Stir in lemon juice and zest
- Taste and adjust seasonings before serving
