SPICY OYSTER MUSHROOM STIR-FRY

INGREDIENTS

1 pound oyster mushrooms

5 tablespoons olive oil, divided

3 teaspoons ginger, freshly grated

2 teaspoons garlic, minced

1 tablespoon spicy bean sauce (ma po sauce)

1 tablespoon light soy sauce

½ teaspoon sugar

1 hot peppers (such as Thai chilis), de-seeded and sliced diagonally

 

INGREDIENTS

1 pound oyster mushrooms

5 tablespoons olive oil, divided

3 teaspoons ginger, freshly grated

2 teaspoons garlic, minced

1 tablespoon spicy bean sauce (ma po sauce)

1 tablespoon light soy sauce

½ teaspoon sugar

5 hot peppers (such as Thai chilis), de-seeded and sliced diagonally

 

DIRECTIONS

  1. Cut each oyster mushroom in half lengthwise. Cut the oyster mushrooms into strips.
  2. Heat 4 tablespoons of oil in a wok or large sauté pan over high heat. Fry the mushrooms lightly in the oil until both sides are golden brown. Remove the mushrooms from the oil.
  3. Reduce the heat to medium low. Add another tablespoon of oil to the wok or large sauté pan. Add the ginger and cook for 1 minute. Add the garlic and cook for another 30 seconds. Stir in the spicy bean sauce and cook for another 30 seconds.
  4. Add the mushrooms back to the wok, along with the light soy sauce and ½ teaspoon sugar. Add the peppers to the wok and stir-fry everything together for another 2 minutes. Serve immediately.
