INGREDIENTS
½ cup unsalted butter
1 shallot, minced (about ¼ cup)
7-8 sage leaves, chopped into thin strips
1 pound mushrooms, sliced
½ cup white wine
½ cup shredded, parmesan cheese
4 servings pasta
Salt and pepper to taste

DIRECTIONS
- Boil a large pot of water for your pasta.
- Heat a large frying pan on medium high heat.
- Once hot, add butter and reduce heat to medium. The butter will sizzle and foam, and then turn golden brown in color.
- Add shallots and cook until soft and translucent. (about 3 minutes)
- Add sage and mushrooms, season with salt and pepper to taste.
- Once the mushrooms are golden brown, add the wine scrapping up any little bits stuck to the bottom of the pan. Turn heat to medium-low. Reduce until the wine has almost evaporated, approximately 5 minutes. Season with salt and pepper to taste.
- Make pasta according to package directions. (cooking one minute less than instructed on the package as the pasta will continue to cook once added to sauce)
- Use tongs or a slotted spoon to remove pasta from the water and add it into the pan with the mushrooms.
- Add 1/4 cup of the pasta water to your frying pan and mix everything thoroughly. The starch in the pasta water will help to thicken and bring your sauce together and help it adhere to the pasta.
- Add shredded Parmesan cheese and mix thoroughly. Enjoy.
