Zucchini bread is a great way to use up all that zucchini from the garden. This recipe is a quick bread (bread recipe without yeast). It is super simple to make and stays incredibly moist for days. I like to butter and dust my pans with granulated sugar. As the bread bakes, it gives the outside crust a thin crisp caramel crunch.

INGREDIENTS
- 2 cups All Purpose Flour
- ¾ tsp. Baking Soda
- ¾ tsp. Baking Powder
- 1 tsp. Cinnamon
- 1 tsp. Salt
- ½ cup Granulated Sugar
- 1 cup Brown Sugar
- 2 ea. Whole Eggs
- ¾ cup Vegetable Oil
- 16 oz. AF Zucchini, Shredded

INGREDIENTS
- 2 cups All Purpose Flour
- ¾ tsp. Baking Soda
- ¾ tsp. Baking Powder
- 1 tsp. Cinnamon
- 1 tsp. Salt
- ½ cup Granulated Sugar
- 1 cup Brown Sugar
- 2 ea. Whole Eggs
- ¾ cup Vegetable Oil
- 16 oz. AF Zucchini, Shredded
DIRECTIONS
- Prepare two 8”x4” loaf pans with pan spray or butter and a coat of granulated sugar.
- Sift flour, baking soda, baking powder, cinnamon, and salt together in a medium bowl.
- In a separate bowl, combine both sugars and eggs and mix until combined, beat in oil until fully incorporated.
- Fold in the zucchini and divide among the prepared pans. Bake at 325°F for 40 to 50 minutes. Cool for about 10 minutes and remove from pans.
- Continue to cool to room temperature on a cooling rack.
