Sweet Potato Wedges

A healthy alternative to French fries, this side is an easy weekday go to.

 

INGREDIENTS

2 Lbs. Small, sweet potatoes about 5" long and 2" around

2 Tbsp Extra Virgin Olive Oil

1 Pinch Cinnamon

1 Pinch Chipotle Powder

Salt, to Taste

DIRECTIONS

  1. Preheat oven to 350 degrees F
  2. Peel potatoes, then cut lenghtwise into wedges.
  3. Place in a mound on tray. Add olive oil and toss to coat. Spread out evenly on tray leaving space for evaporation and caramelization.
  4. Place in oven and cook for appoximately 15 minutes, checking color. If they are getting dark, flip over. Allow to cook about 5 more minutes or until soft to the touch.
  5. Once they are soft to the touch and slightly dark, remove from oven and sprinkle with salt, cinnamon, and chipotle powder. Toss to coat.
  6. Allow to cool and serve.
