A healthy alternative to French fries, this side is an easy weekday go to.
INGREDIENTS
2 Lbs. Small, sweet potatoes about 5" long and 2" around
2 Tbsp Extra Virgin Olive Oil
1 Pinch Cinnamon
1 Pinch Chipotle Powder
Salt, to Taste
DIRECTIONS
- Preheat oven to 350 degrees F
- Peel potatoes, then cut lenghtwise into wedges.
- Place in a mound on tray. Add olive oil and toss to coat. Spread out evenly on tray leaving space for evaporation and caramelization.
- Place in oven and cook for appoximately 15 minutes, checking color. If they are getting dark, flip over. Allow to cook about 5 more minutes or until soft to the touch.
- Once they are soft to the touch and slightly dark, remove from oven and sprinkle with salt, cinnamon, and chipotle powder. Toss to coat.
- Allow to cool and serve.
