Sesame Cucumber Salad

This cucumber salad is traditionally served as Ban Chan (Korean side dish) but could also fit in the side dish category. Paired with sesame grilled salmon, your dinner guest will ask for it again.

INGREDIENTS

  • 2 Each English Cucumbers — Cleaned, Cut Down the Middle Length Wise, Then Cut Into ½" Moons
  • 1 tsp Minced Garlic
  • ¼ Cup Rice Wine Vinegar
  • 1 Tbsp Gochujaru or Red Pepper Flakes
  • 2 Tbsp Sugar
  • 2 Tbsp Toasted Sesame Seeds
  • ½ Cup Greed Onions — Diced Fine
  • 1 Tbsp Sesame Oil
  • 1 Tbsp Kosher Salt

DIRECTIONS

  1. In mixing bowl, first add vinegar and sugar to let the sugar begin to dissolve.
  2. Add remaining ingrediencts and mix well.
