Carrot Cake

One 3-Layer 8” Cake

We love to make carrot cake in both the Spring and Fall. It’s a great way to utilize your CSA carrots. Most people use ordinary orange carrots, but we find the cake is delicious with any variety of carrots. This recipe is super simple and can be used to make a full cake or cupcakes.

 

EQUIPMENT

  • Measuring Cups
  • Measuring Spoons
  • Vegetable Peeler and Shredder
  • Stand Mixer with paddle attachment
  • Medium Bowl
  • Sifter
  • 3- 8” round cake pans
  • Spatula

 

INGREDIENTS

  • 2 cups All Purpose Flour
  • 1 tsp. Baking Soda
  • 1 tsp. Baking Powder
  • 1 tsp. Apple Pie Spice
  • ½ tsp. Salt
  • 1 cup Granulated Sugar
  • ½ cup Brown Sugar
  • 4 each Whole Eggs
  • 1 ¼ cup Vegetable Oil
  • 4 cups Carrots, peeled & shredded

DIRECTIONS

  1. Prepare three 8” x2” round cake pans with pan spray and a dusting of flour.  
  2. Sift flour, baking soda, baking powder, spice, and salt together in medium bowl.
  3. In a mixer bowl with paddle attachment, combine both sugars and eggs and mix until combined; beat in oil until fully incorporated.  
  4. Fold in the carrots and divide among the prepared pans.
  5. Bake at 350°F for 20 to 25 minutes.  
  6. Cool to room temperature and remove from pans.
  7. Frost with cream cheese frosting.


CREAM CHEESE FROSTING INGREDIENTS

  • 5 oz. Unsalted Butter, softened
  • 16 oz. Cream Cheese, softened
  • 2 cups Confectioners Sugar
  • 1 tsp. Vanilla Extract

 

CREAM CHEESE FROSTING DIRECTIONS

  1. In mixer bowl with paddle attachment, beat butter until smooth.
  2. Beat in cream cheese until smooth.
  3. Add powdered sugar and vanilla and mix on low speed until combined. Do not over beat or frosting will become thin. Mix until just incorporated. If too thin, chill to make firmer.
