Ashbourne Farm is now cultivating a wide variety of culinary mushrooms including oyster, lion's mane, shiitake, and chestnut. Check out our Mushroom Project to order an assorted basket by the pound. This dish is super simple and easy to make. You will be rewarded with incredible flavors if you can source premium olive oil, parmesan, and sea salt. If not, no worries, you and your guest will remember the day you ate this Italian classic.

INGREDIENTS

½ pound lion’s mane or oyster mushrooms

1 whole lemon

2 tablespoons extra virgin olive oil

¼ pound parmesan, shaved

1 teaspoon sea salt

20 arugula leaves

½ pound lion’s mane or oyster mushrooms

20 arugula leaves

DIRECTIONS

  1. Using a mandolin slicer, or very sharp knife, slice the mushrooms very thin – 1/8 inch is great.
  2. Lay sliced mushroom on a large platter. Don’t overlap.
  3. Slice the lemon in half and squeeze juice evenly over the mushrooms. You want about 2 tablespoons of juice.
  4. Drizzle olive oil evenly over mushrooms.
  5. Using a vegetable peeler, shave the parmesan onto the mushrooms.
  6. Sprinkle sea salt.
  7. Spread arugula leaves over the mushrooms.
  8. Rest at room temperature for at least 5 minutes to allow the mushrooms to absorb the flavors.
