Roasted Vegetable Strata

Packed full of roasted veggies, this breakfast favorite is a delicious start to any one’s day. Change up the veggies to match your taste. Prep it the night before so it’s ready to pop in the oven the next morning.

 

INGREDIENTS

  • 1 Medium Red Bell Pepper, Diced
  • 1 Medium Red Onion, Diced
  • 3 Tbsp Olive Oil
  • 3 Cloves Garlic, Minced
  • 2 Medium Zucchini, Diced
  • 8 oz. Mushrooms, Sliced
  • 8 oz. Cream Cheese
  • ¼ Cup Heavy Cream
  • 2 tsp. Salt
  • 1 tsp. Black Pepper
  • 6 Large Whole Eggs
  • 6 Cups Bread Cubes, ½ Inch
  • 2 Cups Cheddar Cheese, Shredded
  • 1 Cup Spinach, Chopped

DIRECTIONS

  1. Night before baking: In a bowl, combine red pepper, red onion, garlic, zucchini, and olive oil. Toss to coat. Place on a lined sheet tray and bake at 400 F for 25 minutes.
  2. Add the mushrooms and spinach to the sheet tray and bake an additional 5 to 10 minutes. Remove from oven and cool.
  3. In a separate bowl, beat cream cheese, heavy cream, eggs, salt and pepper until combined. Set aside.
  4. Spray the 13 x 9 casserole with baking spray. Cover the bottom of dish with cubes of bread.
  5. Spread the cooled, roasted vegetables on top of the bread cubes, pour cream cheese mixture over the top to fill the casserole. Sprinkle the top with cheese and wrap. If preparing the night before, place in cooler until next morning.  
  6. Pre-heat oven to 350 F. Take casserole from cooler and set out at room temperature until oven heats up.
  7. Bake strata for 40-50 minutes. Let stand 5 to 10 minutes before serving.
