Mushroom & Shallot Ragout

Featuring Ashbourne Farms mushrooms, this dish is a simple, delicious addition to any protein.

INGREDIENTS

1 Lb Ashbourne Farms Mushrooms, roughly chopped (we suggest our Chef’s Blend of Oyster Mushrooms)

2 oz. (1 large) Shallot, small diced

1 tsp Minced Garlic

1 Tbsp Fresh Parsley, small diced

1 Tbsp Fresh Thyme, small diced

1 Tbsp Fresh Rosemary, small diced

2 Tbsp Chives, small diced

1 each Lemon zest & juice

½ tsp Salt

¼ tsp Black Pepper

2 Tbsp Olive Oil

1 Tbsp Butter

DIRECTIONS

  1. In medium Sauté skillet, heat Olive oil on medium high heat approx. 1 minute.
  2. Add shallots and cook until lightly translucent (approx. 3 minutes)
  3. Add garlic and cook for 30 seconds
  4. Add butter. Once butter is hot, add mushrooms, slat & pepper. Sauté approx. 4 minutes.
  5. In medium mixing bowl add cooked mushrooms and fresh herbs. Zest and juice the lemon over top and mix thoroughly.
